By James Feucht, PhD, Colorado State University Cooperative Extension . . .nor does it go down in the fall. Sap is food energy (mostly sugars). It is made by leaves through a process we call photosynthesis. In trees, much of it is stored as starch and fats in buds, and in ray cells of the trunk. Some goes to roots. When spring arrives, the stored starches and fats convert to energy-supplying sugars, right near where they are needed for growth.
