Food Preservation and Storage

Because of Colorado’s high altitude, water and other liquids boil at a lower temperature which can affect the safety of home canned foods if processing times and pressures are not adjusted.

This site links you to 22 Colorado State University Extension fact sheets on food preservation and food safety written specifically for “mile high” residents.

Topics include:

  • directions for hot water bath processing of, jams, jellies, pickles and fruits

  • high altitude adjustments and directions for pressure canning of meats, fish and vegetables

  • freezing fruits and vegetables

  • drying fruits and vegetables and making fruit leathers
